DOC is an open window over the stunning landscape of the Douro Valley de to its location, in the riverside between Régua and Pinhão. Signed by the Chef Rui Paula, the DOC’s cooking brings back the old memories of the regional recipes, now with the Chef’s personal modern inspiration.
Always preferring DOC and DOP products, Rui Paula reinvents the way to cook the traditional recipes, like “Milhos”, “Cabritinho”, “Porco Bísaro” and “Vitela Maronesa”. In the season, hunting dishes are also a part of the menu, enhanced by the chestnuts and the wild mushrooms.
